Cupcake Fiasco
Do: When making cupcakes, always read your recipe so that you know what ingredients you are going to need.
Don't: Assume what you do and don't have in your kitchen. I assumed I had sugar.
I really thought I had sugar so I didn't even bother to check. Turns out the sugar I did have was sugar packets which there were not enough of. Which leads me to...
Don't: When finding out you don't have enough sugar, use something else to mix with the sugar so that the prerequisite amount is fulfilled. Something like Splenda, for example.
Don't: Use soy milk instead of whole milk. It doesn't taste the same. Trust me.
FACT: Evaporated milk is NOT the same as condensed milk. There goes the frosting.
Don't: Trust your significant other when asking about measurements. Somehow 2 ounces of chocolate was the whole bag. (It was a 24 ounce bag and a whole lot of chocolate.) This was a mistake from both of us. His mistake in measurements. My mistake in listening. Math was not our friend.
The cupcakes are politely described by Mr. Henderson as "how I imagine cardboard left outside for a week in Rangoon would taste."
Well that wasn't very nice.
To console me, Mr Henderson assured me that he knew the cupcakes were made with love.
This was also said while he was dumping them in the garbage.

The Clock is Ticking!
So as the wedding clock is ticking, everyone in the Henderson household is stressing out and struggling to get stuff done. So I can gladly say that something has been done! Yesterday the bridesmaid dress were purchased! Woohoo! One thing I can scratch off the list.
Now I just have to take care of the invitations, centerpieces, favors, rentals....

Oh hello!
I have been a bad, bad blogger.
To make up for it, I will tell you what has been happening in my life for the past few months.
1. I have gotten a new job that is much closer to home (yay!) but they are 8 hour shifts five days a week instead of the usual 12 hour shifts 3 days a week (boo!).
2. I have been more stressed out about money in the past couple months then ever in my life. I'm getting a part time job juggling on street corners to help pay for the wedding. (Note to self: learn how to juggle.)
3. I made some awesome strawberry cupcakes and then realized who was going to have the job of eating them. A diet of cupcakes might sound pretty good at first, but not if you're looking to loose the pudgy area around the tummy.
So yeah that doesn't sound like much does it? Feels that way though.
Better days are ahead since I just started back into 12 hour shifts (yay!). So my next plan is to get back into wedding planning mode since Mr. Henderson has recently taken up the mantle and he does NOT like it. He will turn into a groomzilla if I don't save him and we can't have that happening.
Please excuse me while I dust off my wedding planning cape.

I Heart Fage
Hello all! I'm here to share with you a recommended edible delight that I have been friendly with. Everyone, say hello to Fage (pronounced: Fa-yeh!).
This is a very yummy Greek yogurt and highly recommended as a nutritious snack as it contains the necessary live active yogurt cultures as well as high amounts of protein, vitamins and minerals. The consistency is thicker and (warning!) is not sweet like the yogurts we are used to. In fact, it does taste a wee bit on the bitter side. However, all you need to do to fix that is add some fruit or honey. AND because Fage is so great, they thought of that ahead of time and have marketed Fage Total Fruit which I have stocked up on. Delish!
So join the party and buy some Fage today!
